Pancakes in the morn

I was talking to my friend, planning a sleepover. It was a Saturday night. He told me to come over soon, but I missed that. I was already thinking about breakfast the next morning. I realized I had buttermilk in my house, and as mom and I were walking out the door, I grabbed the b-milk and my recipe booklet, ensuring a good Sunday breakfast. I slept much better that night with buttermilk fairies and thoughts of warm pancakes dancing in my head.


2 cups AP Flour
1/3 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 1/4 cups buttermilk
2 beaten eggs
2 tbs melted butter

1) Combine all wet ingredients.

2) Combine all dry ingredients

3) Add wet to dry and stir until just combined (lumps will melt out later)

4) Cook in butter over medium heat until golden brown on both sides.

I have a similar recipe, but instead of buttermilk, it calls for a cup of sour cream. They are pretty rockin. I make silver dollar sized pancakes and top them with strawberries and powdered sugar.
But, it sounds like I need to try buttermilk!

I've always had problems as to what to put on top of my pancakes. I hate syrup, so my usual topping of choice is powdered sugar, but pancakes and powdered sugar just don't mix. I also find fresh fruit to be strange on pancakes. . .so maybe I should just give up completely on the idea of liking pancakes

What to put on pancakes? We put jam on sometimes but my son loves loves loves putting yogurt on his pancakes!

I desperately want the recipe for your cinnamon buns! Please Please Please???

I guess I'm the only traditionalist around because I just want mine with butter and maple syrup. All those other toppings get saved for waffles. Oh, and I want a sage-rich, slightly spicy, porky-good sausage on the side. (To be dragged through the maple syrup, too, of course!)

Sorry i didn't answer you on the other post. My recipe is simply the french laundry brioche dough recipe. Instead of baking it in loaf pans i roll it out, brush with melted butter and cinnamon sugar, roll it back up, cut it into rolls, then let rise for 2 hours then bake.

Making me hungry... They have stopped selling buckwheat pancake mixes in most grocery stores. If you haven't tried them, maybe you should. I just buy the buckwheat flour at the local health/specialty/whatever-you-call-it store and use half regular flour in the mix. You either love 'em or not.

I have always wanted to use buttermilk for my pancakes, but I've never had the chance to. Definitely doing it next Sunday.

WindintheWires - my favorite on pancakes is mom's homemade strawberry jam, just a bit tart and for waffles it has to be just from the stove so its still warm homemade applesauce - again just a bit tart
